Flavorwave Oven Recipes

6 medium plum tomatoes, diced (500 ml)

1/3 cup red onion, small dice (75 ml)

1/3 cup fresh basil, finely chopped (75 ml)

2 tbsp fresh Parmesan cheese, finely grated (30 ml)

1 head garlic cloves

2 Tbsp fresh parsley, chopped (30 ml)

2 tbsp balsamic vinegar (30 ml)

2 Tbsp olive oil (30 ml)

½ tsp salt to taste (1 ml)

½ tsp black pepper (1 ml)

1 loaf French baguette

 

1. Remove white papery skin from garlic head (do not peel or separate cloves). Cut head about a third from the top. Wrap garlic head in foil. Bake garlic on top rack of the Flavorwave oven and bake at 450°F (220°C) for 35 minutes. Remove garlic from oven, remove foil and cool 10 minutes. Separate cloves; squeeze to extract garlic pulp. Discard skins.

2. Combine tomatoes, red onion, basil, parsley, garlic pulp, cheese, balsamic vinegar, olive oil, salt and pepper in a medium size non-metal bowl. Chill at least 2 hours or overnight, stirring occasionally to blend flavours.

3. Just before serving, slice baguette on the diagonal and toast until golden brown. Divide chilled tomato mixture evenly among the toasted baguette slices. Serve toast warm
